Ingredients for 2:
1 mandarin
2 tbsp low-fat yogurt
2 tsp Scandia Pepparrot horseradish, Classic Quality, Naturally Hot
1 tsp mustard
Salt
Freshly ground pepper
A few endive leaves
1/2 bunch of chives
2 slices of pumpernickel
2 slices of roast beef

Pumpernickel with roast beef

Preparation:
Peel and separate the mandarins into segments. Mix the yogurt, horseradish and mustard together. Season with salt and pepper.
Wash the endives, shake dry and tear into bite-sized pieces. Finely cut the chives.
Cut the pumpernickel into half diagonally. Spread the halves with the horseradish and yogurt mixture. Divide the endives, mandarin segments and roast beef between every other slice. Sprinkle the chives on top. Cover with the remaining halves of bread.
